Ficelle Picarde

A traditional French dish made of thin crêpes filled with ham and creamy mushrooms, baked with cream and cheese until golden.

Ingredients
  

  • 150 g all-purpose flour
  • 3 eggs
  • 500 ml milk
  • 30 g butter melted
  • 1 pinch salt
  • 4 slices cooked ham
  • 300 g mushrooms finely chopped
  • 2 shallots finely chopped
  • 40 g butter
  • 250 ml crème fraîche
  • 80 g grated cheese
  • Salt
  • Black pepper

Method
 

  1. Mix flour, eggs, milk, melted butter, and salt until smooth.
  2. Let the batter rest for 20 minutes.
  3. Cook thin crêpes in a lightly greased pan and set aside.
  4. Melt butter in a pan and sauté shallots until soft.
  5. Add mushrooms and cook until all liquid evaporates.
  6. Season with salt and pepper.
  7. Stir in half of the crème fraîche and remove from heat.
  8. Place one slice of ham on each crêpe and spread mushroom mixture on top.
  9. Roll the crêpes tightly and place them in a buttered baking dish.
  10. Pour remaining crème fraîche over the crêpes.
  11. Sprinkle grated cheese on top.
  12. Bake at 200 °C until golden and bubbling.

Notes

Use thin crêpes for easier rolling.
Serve immediately while hot.
Pairs well with a simple green salad.
