- Mix flour, eggs, milk, melted butter, and salt until smooth.
- Let the batter rest for 20 minutes.
- Cook thin crêpes in a lightly greased pan and set aside.
- Melt butter in a pan and sauté shallots until soft.
- Add mushrooms and cook until all liquid evaporates.
- Season with salt and pepper.
- Stir in half of the crème fraîche and remove from heat.
- Place one slice of ham on each crêpe and spread mushroom mixture on top.
- Roll the crêpes tightly and place them in a buttered baking dish.
- Pour remaining crème fraîche over the crêpes.
- Sprinkle grated cheese on top.
- Bake at 200 °C until golden and bubbling.

Use thin crêpes for easier rolling.
